Best Gluten-Free Banana Bread Recipe

Banana Bread Recipe
INGREDIENTS- 1 packet of 220g Sweetpea Pantry Pancake Mix
- 45g Chopped Pecans (or walnuts)
- 2 Tbsp Pecan Butter (or any nut butter of your choice)
- 1 tsp Baking Powder
- 1 tsp Baking soda
- 1 tsp Ground Cinnamon
- 90mls Water
- 60mls Milk (I used unsweetened Oat Milk)
- 1 tsp Vanilla Extract
- Pinch of Salt
- 3½ Bananas (approx 365g)
- 20g Dark Chocolate Chips
- Preheat the oven to 180 degrees.
- Line a loaf tin with some greaseproof paper.
- In a large mixing bowl, mash the bananas.
- Add all of the ingredients and mix well.
- Pour into the loaf tin and bake in the oven for 40-45 minutes (or until a knife comes out clean).
- Enjoy warm with some butter or nut butter on top.
- Or else cool completely, slice and freeze.
- Simply defrost in the toaster.
